A Patriotic Picnic
Food and Fun on the Fourth
By Kendeyl Johansen
Use the tips below from the Food Safety and Education Service to safely prepare, pack and serve perishable items.
- Transport perishable foods from the store to your home as quickly as possible. Cook food immediately or place in refrigerator.
- After cooking, adequately chill perishable foods (like chicken or pasta salad). Keep these foods in the refrigerator until just before leaving.
- Plan food portions to avoid leftovers. Bring small containers of perishable condiments, like mayonnaise.
- Place cold foods (like meat sandwiches) in an insulated cooler with plenty of ice or gel packs. Don't pack cooler with perishables until you're almost ready to leave.
- Carry your cooler inside the air-conditioned car. Place cooler in shade upon arrival and keep lid closed whenever possible.
By following the precautions above, you can keep your family's food safe during summer outings. But what about bringing home leftovers? "If you don't know how long a food has been left out, we strongly suggest that you discard it," cautions Berry. During summer months, throw away foods that are outside of the cooler for more than an hour.
