Posh Squash
A Smart Addition to a Baby or Toddler's Diet

Another bonus? Squash is not considered to be a high-allergen food, O'Shea says.
"Squash can be a really fun food for kids to experience," O'Shea says. "The more kids are involved in choosing and preparing their foods, the more likely they are to eat them. It can be a fun family activity to grow the squash, or pick it out at the farm stand or grocery store, and then prepare it with older kids. They come in such interesting shapes, sizes and colors."
Here are some scrumptious squash recipes to try on your baby or toddler!
1 1/4 cups squash
1/4 cup boiled water, breast milk or formula
Steam squash until tender. Place into blender and puree for 30 seconds to a smooth texture. Makes about 1 1/2 cups.
1 butternut squash, peeled, seeded and chopped into chunks
2 carrots, peeled and chopped
2 tablespoons butter
3 to 4 tablespoons milk, formula or breast milk
3 to 4 tablespoons infant rice cereal
Cook the butternut squash and carrot in boiling water until tender, about 20 minutes. Drain. Add squash, carrot, butter and milk to a blender (or use a hand-held blender) and puree until desired consistency. Stir in the baby cereal.
2 acorn squash
2 tablespoons butter or margarine
Dash of nutmeg
Dash of cinnamon
Halve and seed the acorn squash. Place, cut side down, in a buttered baking dish. Cover and bake at 400 degrees F until tender, about one hour. Cool, then scoop out the pulp. Put in a blender along with the butter, nutmeg and cinnamon. Puree until smooth.
